Ingredients

  1. 2 lbPotatoes, diced
  2. 2 tbspCooking Oil
  3. Dressing
  4. 1/2 cupSour Cream
  5. 1/4 cupMayonnaise
  6. 2 eachGreen Onions, chopped
  7. 1 tspSalt
  8. 1 tspBlack Pepper
  9. 1/2 cupCheddar Cheese, shredded
  10. 1/2 cupBacon, crumbled

Cooking Instructions

    Dice potatoes, toss with cooking oil. Then place them on a sheet pan and place in a 350°F oven until tender. (30-40 minutes)

    Remove potatoes from oven and allow to cool completely.

    To make the dressing:

    Combine sour cream, mayonnaise, green onions, salt and pepper. Then whisk thoroughly to combine.

    Fold cheese and crumbled bacon into the dressing.

    Place cooled potatoes and completed dressing in a bowl and gently combine.
