This is a family recipe I've been making since I was a child. The original soup mix we used has gone, but Knorr's is as close as it gets. Many types of cheese can be used, from cheddar to mozzarella to Monterey jack or blends, and if you're feeling frisky, you can always throw some french onions on top during the last few minutes of the bake. I used to make the same, boring tator tot hotdish that my mom made, loaded with mixed veggies. My kids were never too excited to eat it. One day at work, we were discussing each other's versions of this hotdish and someone mentioned they added cheese on top. I thought I could do better than that and set out to come up with a recipe that my kids not only enjoyed, but one they would ask for. This is what I created!
