Ingredients

  1. 1 cuprice (basmati is traditional)
  2. 2 cupwater
  3. 1/3 cupcashews (unsalted and raw, but roasted is ok)
  4. 3 tbspoil (ghee is traditional or butter but any works with a decent heat point for cooking)
  5. 1 cupfresh or frozen peas
  6. 1 tspcumin seeds
  7. 1 each1 inch piece fresh ginger
  8. 1 tspturmeric
  9. 1 tspgaram masala or curry powder
  10. 1/4 tsppaprika
  11. 1 tspsalt (or to taste)
  12. 3 tbspfresh herbs chopped or 1 1/2 tbl. dried like an Italian mix
  13. 3 eachgreen chillies (Serrano work good, adjust for your heat level)

Cooking Instructions

    Clean and soak rice for 20 minutes. Drain and reserve soaking water.

    Heat oil in medium sauce pan over medium low heat. If using Raw cashews, stir in the hot oil for 10 minutes until golden, remove from oil.

    Turn heat to medium, add cumin seeds, chilies (diced) and ginger (diced). Stir for 2-3 minutes until cumin seeds darken

    Add the turmeric, garam masala/curry powder and paprika. Stir for one minute.

    Add the rice and stir for 4 minutes

    Add the reserved soaking water and fresh peas (see step 8 if using frozen peas)

    Bring to a boil over medium high heat. Reduce heat to low, cover and simmer for 20 minutes undisturbed.

    If using frozen peas, rinse in a strainer under warm water, add to rice after 15 minutes of cooking time (instead of 20 minutes). Do not stir, just add on top, cover and cook 5 more minutes.

    Remove from heat, let stand 5 minutes.

    Added cashews, fluff all with fork. Serve hot.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
