This is great served as a side, I'm not sure if It would be classed as an authentic Indian coconut rice, as its my own creation, which is why Iv called it Indian inspired!

Ingredients

  1. 1Basmati rice
  2. 1Coconut cream
  3. 1salt and pepper
  4. 1chopped spring onions
  5. 1chopped garlic clove
  6. 1frozen peas
  7. 1 tspgaram masala
  8. 2cardomom pods
  9. 1fresh thyme

Cooking Instructions

    Wash rice to get rid of starch.

    Place coconut cream in pan with the peas, garlic, cardomom pods, thyme and salt and pepper. Coconut cream usually comes out of the carton semi solid, so as it melts in the pan, add equal amounts of water so you end up with half and half. Simmer for about 5 minutes.

    Add washed rice and garam masala to the pan and cover with a lid. The liquid level should be enough to be absorbed by the rice and cook thouroughly. I have left the quantities out of this as it would depend on how much rice you want.

    when the rice is nearly done, add the spring onions and stir.

    When rice is cooked, serve with a garnish, I used almonds and more chopped spring onion but coriander would be nice also.

nice try using grated coconut(fried till brown in coconut oil) instead of coconut creame it will give a different taste. just a suggestion
