This was one of those "what the hell am I gonna make for dinner" meals after not going to the store for a couple of weeks. Great as a side dish or throw in some pork or chicken for a meal in itself. So many variations.

Easy Egg Fried Rice

This was one of those "what the hell am I gonna make for dinner" meals after not going to the store for a couple of weeks. Great as a side dish or throw in some pork or chicken for a meal in itself. So many variations.

Ingredients

4 servings
  1. 1 cupfrozen peas and carrots
  2. 1 1/2 cupwhite rice (precooked)
  3. 1soy sauce
  4. 3eggs
  5. 3 tbspvegetable oil (divided)

Cooking Instructions

    Steam frozen peas and carrots until tender.

    In separate pan, heat 2 tbsp of oil over medium high heat. Scoop precooked white rice into pan. Stir for 2-3 minutes.

    Add peas and carrots to rice. Then drizzle soy sauce over to taste. Stir.

    In a small pan, heat tbsp of oil and pour eggs into pan. Allow to cook almost all the way through and flip. (No worries if the egg breaks, it's all the same).

    Remove from pan once cooked and cut egg into pieces. Mix into rice.

I used minute rice...not my best idea but still turned out good
