I had bought a bunch of bananas on sale at the grocery store to save some pennies and wanted to find a delicious and easy way to use them all before they went bad. I found the cake recipe online and added my twist by doing a caramelized topping. It was delicious and tasted great with the Bluebell banana pudding flavored ice cream.

Ingredients

  1. banana cake
  2. 5over ripened bananas sliced
  3. 2 cupall-purpose flour
  4. 1 cupgranulated sugar
  5. 1/2 cupbutter or margarine
  6. 1egg
  7. 1 tspbaking powder
  8. 1 tspbaking soda
  9. 1 tspground cinnamon
  10. 1 tspsalt
  11. 1 tspvanilla extract
  12. caramelized bananas topping
  13. 5over ripened bananas sliced in half inch pieces
  14. 1/2 stickbutter or margarine
  15. 1 cupbrown sugar
  16. 1 tspvanilla extract
  17. butter or margarine to grease pan

Cooking Instructions

    Preheat the oven to 356°F or 180°C. Grease a cake pan.

    Cream the butter and sugar. Add the vanilla extract and egg mixing well.

    Add the bananas and mix thoroughly

  4. 4

    Add the dry ingredients to the wet ingredients in the mixing bowl. Mix well and then pour into greased cake pan.

    Bake for approximately 60 minutes. After 30 minutes check cake for doneness and every ten minutes thereafter.

    While cake is cooling some melt butter in saucepan and add in bananas and brown sugar. Let it cook for about ten minutes to caramelize the bananas. Add the vanilla extract to enhance the flavor.

    Using a fork poke some holes into the top of the cake so that it can absorb the topping. Pour the topping over the cake and slice and serve. Enjoy!
