Ingredients

  1. 8 ozUncooked penne pasta
  2. 1 packages8 ounce fat free cream cheese, cubed
  3. 1/2 cupMilk
  4. 1 packages10 ounces frozen chopped spinach thawed and squeezed dry
  5. 1 tspDried oregano
  6. 1 lbLean ground beef (90% lean)
  7. 2 cloveGarlic, minced
  8. 16 ozPicante sauce
  9. 1 can8 ounce tomato sauce
  10. 1 can6 ounce tomato paste
  11. 2 tspChili powder
  12. 1 tspGround Cumin
  13. 1 cup4 ounces shredded cheddar cheese
  14. 1 can2 and 1/4 ounces sliced ripe olives, drained
  15. 1/4 cupSliced green onions

Cooking Instructions

    Cook pasta as directed. Meanwhile in a small bowl beat cream cheese until smooth. Stir in milk. stir in spinach and oregano, set aside.

    In a skillet cook steve until meat is no longer pink. add garlic, cook 1 minute longer, drain.

    Stir in picante sauce, tomato sauce, tomato paste, chili powder and cumin bring to a boil.

    Reduce heat, simmer, uncovered for 5 minutes. Drain pasta, stir into meat mixture.

    Coat a 13 inch by 9 inch baking dish with nonstick cooking spray. layer half of the meat mixture and all of the spinach mixture. Top with remaining meat mixture.

    Cover and bake at 350°F for 30 minutes. uncover sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with olives and onions, and let stand for 10 minutes before serving.
