Ingredients

  1. 2 lbChicken, cooked and chopped
  2. 2 canLarge butter beans, drained
  3. 3 canNavy beans, drained
  4. 2 tspCumin
  5. 2 tbspOregano
  6. 1 tspSalt
  7. 2 tspWhite pepper
  8. 1 cupWhite onion, finely diced
  9. 2 canChicken broth (about 5 cups)
  10. 8 ozDiced green chilies
  11. 2 tspGarlic powder OR 3-4 cloves minced garlic
  12. 3 tbspCornstarch, mix with one tablespoon water for thickening in the last hour (optional…add if you like a thicker chili)

Cooking Instructions

    Combine all in a slow cooker (crockpot).

    Cook on high for 4-6 hours or on low for 8 hours or more. You may stir once or twice gently, but don't overdo it or the beans will start to break apart.

    Add cornstarch slurry in the last hour or so. Mix in well.

    Optional toppings: fresh cilantro or green onions, pepper jack cheese, sour cream, oyster crackers, crushed tortilla chips

I used two big jars of white northern beans and a rotisserie chicken. It cooked all day while at work and was delicious.
