White Chicken Chili

My family LOVES chili and in the fall and winter we eat it often. So when we need to change it up, this is the perfect solution....and a crazy TASTY one!! #mycookbook

Ingredients

  1. 1 lbshredded cooked chicken (I’ve used ground chicken also)
  2. 16 ozSour Cream
  3. 1/2 cupheavy cream
  4. 1medium white onion, diced
  5. 1medium jalapeño, diced
  6. 3 clovesgarlic, minced
  7. 1 (14.5 oz)can navy beans (drained and rinsed)
  8. 1 (14.5 oz)can great northern beans (drained and rinsed)
  9. 1 (10 oz)can white corn
  10. 1 (14.5 oz)can chicken broth
  11. 2 tbsolive oil
  12. 1 tspcumin
  13. 1 tspdried oregano
  14. 1 tspcayenne (or other ground pepper such as habanero, ghost, etc for more heat)
  15. 1 tspsea salt
  16. Mozzarella Cheese as topping

Cooking Instructions

  1. 1

    In a medium stock pot, heat olive oil and sauté onion and jalapeños until soft. Add garlic and sauté for a minute or two until fragrant.

    Add chicken, beans, corn, broth, and spices. Bring to just to boiling and reduce heat to simmer for 30 mins.

  3. 3

    Add sour cream and heavy cream and continue to heat another 10 mins.

  4. 4

    Add mozzarella individually (optional)
