Ingredients

  1. grit cake
  2. 2 cupgrits
  3. 4 cupchicken broth
  4. 2 tbspminced garlic
  5. 1 cupsmoked gouda
  6. 1salt
  7. 1pepper
  8. 1/2 cupheavy cream
  9. spice mix for cream sauce
  10. 1/4 cupsmoked paparika/sweet
  11. 1 tspcayenne
  12. 2 tspgarlic powder
  13. 2 tsponion powder
  14. 2 tspdry thyme
  15. 2 tspsalt
  16. 1 tsppepper
  17. 1 tspcumin
  18. chorizo cream suace/ per serving
  19. 4shrimp
  20. 1 1/2 tbspspice mix
  21. 1salt
  22. 1pepper
  23. 2 tbspunsalted butter
  24. 2 tbspminced chorizo
  25. 1 tbspminced shallot
  26. 1 tspsmoked jalapeno
  27. 1 tbspred bell pepper
  28. 3/4 cupheavy cream

Cooking Instructions

  1. 1

    grit cake
    bring broth, cream, salt, pepper(to taste) and garlic to a boil
    then bring to a simmer

  2. 2

    pour in grits and stir till they start to thicken then add shredded gouda
    once finished, pour into baking dish and place in the cooler for 30 min

  3. 3

    once cool, use a ring mold to cut "cakes" out then dust with corn starch and fry till golden brown
    (will be crunchy on outside and creamy inside)

    shrimp and chorizo cream sauce
    in a pan place butter,shrimp,shallot,chorizo,jalapeno,bell pepper,
    saute till shrimp are about half way cooked

    add spice mix, mix well then add cream reduce till sauce thickens

    plating
    place grit cake in center
    put one shrimp on each side of cake then pour sauce over everything.
    garnish with scallion and more shredded gouda
