Ingredients

  1. 2 lbspeeled shrimp raw
  2. 1/2 tbspolive oil
  3. 1/2onion chopped
  4. 4-5 clovesgarlic minced
  5. 1 tspadobo seasoning
  6. Salt & pepper to taste (hold off on salt til the end cause wine, broth, and adobo are salty)
  7. 1 lbsprotein pasta
  8. 1 packmushrooms chopped
  9. 1 (8 oz)pack of low fat cream cheese chopped up
  10. 1/2 cupheavy or light cream
  11. 2 cupswhite wine
  12. 1 cuplow sodium chicken broth
  13. 1-2 tbspflour to thicken sauce
  14. 2large sprigs of basil leaves minced
  15. Parmesan cheese to serve

Cooking Instructions

  1. 1

    Boil the pasta according to directions. The last 2 min add the mushrooms to boil. Drain and set aside

    In the same pot add oil, onion, and garlic and cook til soft. Add pealed shrimp and cook til pink/curled up

  3. 3

    Remove the shrimp and add white wine, chicken broth, heavy cream and basil. Bring to a simmer for 5 min

  4. 4

    Add the cream cheese and melt completely. Once melted quickly stir in flour to thicken. Taste for salt before adding shrimp and pasta & mushrooms back to pot.

    Serve with Parmesan cheese on top. Enjoy!
