Can be served with syrup for breakfast or just top with butter and served with beans, soup, etc. A quick and easy way to have cornbread and not heat the house up.
Cooking Instructions

Heat a griddle or skillet.

Mix all ingredients in a measuring cup or bowl.

Place a small amount of oil or margarine in the skillet

Pour about 1/3 of the batter into skillet

Cook until bubbly about 60-90 seconds

Oil & Gluten-Free Okara Apple Cake
Recently I've been trying various easy okara cake recipes (oil-free, wheat-free and low-calorie), and I think this one is a big success. I thought it may be not sweet enough since I only used 2 tablespoons sugar. But with the natural sweetness of the apple, the cake was moderately sweet, and maybe I shouldn't say this myself, but it was delicious. Please bear in mind that the sweetness of the cake varies depending on the apple you use. So use the sweetest looking apple as possible. I don't recommend using sour type apples.You only need to whip the eggs for 1 minute, but whip them really well continuously. Be sure to use large size eggs. The end product will vary depending on the okara you use. In Step 2, add the apple first to the egg mixture, and mix. Then add the okara, and mix really well. The batter is rather thick, so be sure to put the batter into the corners at the bottom of the cake pan. The "Increased Okara Version" is moderately sweet, so adjust the sweetness by adding more sugar in the batter, or by pouring caramel sauce over the cake. Recipe by ne-ne

I made this oil-free for myself, and also gave it as a present to my health-conscious friend.You just mix it all together, so as long as you thoroughly mix the egg, it will be great. If you're not concerned about keeping it oil-free, you can line the pan with butter and dust with flour. It's got a light sweetness, but you can make it sweeter with more sugar. I haven’t eaten carrot cake in so long, usually I can only have one bite of normal cake without problems, I was craving a carrot cake so I adapted a recipe I found on the 101 Cooking for Two blog.This recipe is #lowfat with about 12.1 grams of fat per serving. If you leave out the walnuts it reduces to 7.1 grams of fat per serving. #vegan options.The original recipe calls for coconut flakes but I don’t like coconut so I left them out. It also calls for eggs but I used flax seed instead. Next time I might try 1/4 or 1/3 of an egg white.The original recipe also calls for crushed pineapple instead of applesauce so you could experiment with that.
