Struffoli Struffoli
This is a classic Neapolitan Christmas dessert: small balls of fried dough coated in honey, candied fruit, and colorful sprinkles. That’s the basic idea, but there are many little stories behind struffoli. Do you know why they should be small and round? Or why it’s important to use plenty of honey? And what do the silver dragées used for decoration represent? Let’s discover some fun facts about struffoli. Tradition says they should be generously decorated with honey and candied fruit, especially citron, orange, and pumpkin. Colorful and silver sprinkles, known as 'diavulilli,' should also be used in abundance. This isn’t just for taste and color, but also because they are said to symbolize wealth and prosperity. Sometimes, chocolate coins are added as well. Caterina MartinelliTranslated from Cookpad Italy -
Ricciarelli Ricciarelli
Ricciarelli are a classic and delicious Tuscan treat (originally from Siena) made with just a few ingredients: almonds (or almond flour), sugar, egg white, powdered sugar, all-purpose flour, and grated orange zest. They require only a short baking time to keep their soft texture, and they are truly unique in flavor. This is a quick version of the recipe, using brown sugar instead of granulated sugar, and I rolled them in sliced almonds. I can assure you the result was excellent. With these amounts, I made 25 ricciarelli. Lida CecchiniTranslated from Cookpad Italy -

Zuchini Fritters Zuchini Fritters
Adjusted recipe of it to make it vegan. I subbed eggs for flax eggs. Almond flour remained 1/2 cup. This worked for me but some might want to add a bit of nut milk for their liking. This recipe makes about 20 - 22 small fritters. I originally found recipe here.... thank you! Use again 👍🏼https://ifoodreal.com/baked-zucchini-fritters-recipe/#recipeHappy cooking! Mara Michelle -

Giambotta Giambotta
This was my pops favorite dish to make. But because it was so labor intensive, he only made it about once a year.He would let it heat over a low flame for so long after adding the tomatoes, that it would be piping hot. I still have the burns on the top of my mouth from the first time that I tried it. :-)All of the vegetables in this stew combine together to make a delicious dish. This goes great with Italian Bread to dip into it. I have heard that some people add sausage to their Giambotta. To me, it does not need it, but if you want to add then feel free.I have added a picture of the recipe as my dad gave it to me back in 96. It was one of the many last times that he was supposed to cook it, but he never stuck to that goal.I hope you like this as much as my family and close friends love it. #mycookbookEnjoy! J.A.B.
