Loaded Potato & Buffalo Chicken Casserole

Ingredients

  1. 2 lbdiced chicken
  2. 8diced potatoes
  3. 1 cupdiced green onions
  4. 1 cupcrumpled bacon
  5. 2 cupmexican cheese
  6. 1 tbsppaprika
  7. 1 tbsppepper
  8. 2 tbspcajun seasoning
  9. 1 tbspgarlic salt
  10. 1/3 cupolive oil

    Mix olive oil, pepper, paprika, garlic salt, cajun seasoning in a large mixing bowl and add diced potatoes. Stir to coat.

    Pour potatoes in greased casserole dish and cook at 500° (Yes, 500° is correct!) for 45 minutes. Stir occasionally.

    Mix boneless, skinless, diced chicken in remaining olive oil mixture and leave to marinate while potatoes cook.

    When potatoes are done, reduce temperature to 400° and add chicken to casserole and stir to spread evenly.

    Add cheese, green onions and bacon pieces to top of casserole. Allow to cook for additional 20 minutes to allow chicken to bake thoroughly. Cool before serving. Optional: drizzle ranch dressing on top.

Very delicious !! I added ranch over the potatoes and chicken then the cheese,bacon & green onions !
