I first tried Mac & Cheese Soup long ago at a restaurant in our area that is now (sadly) closed down. It was so good, and I always wanted to try making it so this was my attempt with the addition of ground beef. I think it turned out great.You can make this with elbow mac, ditalini, shells, or even rotini, any small pasta that'll fit in a spoon really lol. Tonight I had to use shells because our local market was out of elbow mac. How does that even happen? Lol

This is a nice item to cook when you just want to eat a little throughout the day. I usually make a double batch of this in the morning, and we eat it for lunch and dinner. There is never left over.

Got bored one night and decided to experiment with different spices in my beef and potato soup. Had no clue that celery seed and that smoke flavor would create that "zing" I was looking for. And now you can try it for yourself to see what I'm talkin' 'bout.

Great on those cold nights. Filling and comforting and can also omit beef if you like just vegetable soup.
