Ingredients

  1. 3Yellow squash, cubed
  2. 2Zucchini, cubed
  3. 1 tbspOlive oil
  4. 1 tbspButter, optional
  5. 3 cloveSmashed garlic
  6. 1/2 tspOr to taste crushed red pepper
  7. 1 1/4 cupFat free half and half
  8. 3 tbspLiquid egg whites
  9. 1 cupShredded American cheese, 2%, divided
  10. 2 tbspDried minced onion
  11. 1 tbspFlour, heaping
  12. 1/2 cupBread crumbs mixed with a drizzle of olive oil and a dash of salt, I used panko

Cooking Instructions

    In an iron skillet on medium high, heat up the oil and butter with the crushed red pepper and smashed garlic cloves.

    Toss in squash and sauté for a few minutes. Add dried minced onion and flour. Sauté for another minute or so.

    In a bowl combine half and half, egg whites, 1/2 cup of cheese, salt & pepper and whisk. Pork ur into skillet with squash and stir around til bubbling. Remove from heat and add bread crumb mixture on top with rest of cheese. Bake at 375 til golden brown on top.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
