Chicken Risotto with Asparagus & Mushrooms

Ingredients

  1. 1 packagerice
  2. 2 mediumchicken breast
  3. 1 packageasparagus
  4. 1 packagemushrooms
  5. 1 cupspinach
  6. 2 clovegarlic
  7. 1/2 mediumonion, chopped
  8. 1chicken bouillon
  9. 1 tbspolive oil
  10. to tastesalt and pepper
  11. to tastedried parsley and oregano
  12. 1 cupcheese

Cooking Instructions

  1. 1

    Boil water, add chicken breasts and chopped asparagus and cook

  2. 2

    Heat olive oil and cook onions, garlic. Add mushrooms and cook a little bit and then add rice on medium heat. Then add a cup of the water used to cook chicken and asparagus

  3. 3

    Cook around 15mins and then add spinach, chicken and asparagus and add more water if needed

  4. 4

    Cover and let simmer for few minutes

  5. 5

    Add salt, pepper, oregano and parsley and mix all together

  6. 6

    Add cheese and cook for another 2 minutes

  7. 7

    Serve and enjoy
