Mini Quiche in Prosciutto cups

Ingredients

  1. 1eggs
  2. 1thinly sliced prosciutto
  3. 1spinach
  4. 1Shredded Asiago cheese
  5. 1Diced Tomato
  6. 1garlic cloves
  7. 1Shallot

Cooking Instructions

    Slice shallot in thin strips and dice garlic

  2. 2

    Saute garlic and shallot in tablespoon of olive oil to caramelize

  3. 3

    Add spinach to pan to wilt and salt

  4. 4

    Beet eggs

  5. 5

    Heat oven to 375

  6. 6

    Line cupcake tray with 1 slice if prosciutto fold to fit the cup

  7. 7

    When cooled add spinach, garlic and shallot mixture to beaten eggs

  8. 8

    Add as I ago cheese as desired

  9. 9

    Pour into cups

  10. 10

    Bake for 30 minutes
