Cooking Instructions

In one bowl, using an electric mixer, mix together the egg yolks and sugar until light and fluffy. Then add the flour, baking powder, salt and fold in together.

In a separate bowl, beat the egg white to soft peaks, then add to the flour mixture and fold together into a smooth batter.

Pour into a baking tray, spread out to fill all sides. Bake at 180 degrees centigrade for 10 minutes. Set aside to cool completely.

Lay a clean, dry cloth on a flat surface. Sprinkle over with icing sugar, then lay the sponge up side down on the sugar. Spread the jam all over the sponge followed by a thick layer of whipped cream.

Using the cloth, gradually roll over the sponge, taking care not to break it. End up wrapping the rolled sponge with the cloth and refrigerate to firm up a little.

Unwrap and serve with ice cream or custard.
