Ingredients

  1. 2 largeeggs
  2. 1/2 cupgranulated sugar
  3. 1/2 cupbutter, melted
  4. 3/4 cuphalf & half
  5. 1 tspvanilla
  6. 1 1/2 cupchopped, toasted pecans, divided
  7. 1 1/2 cupfresh cranberries, divided
  8. 1 loaf(16 ounces) raisin bread, cut into 1-inch cubes
  9. Lemon-Vanilla Hard Sauce
  10. 1/2 cupbutter, softened
  11. 1 tsplemon zest
  12. 1 tbsplemon juice
  13. 1 1/2 cuppowdered sugar
  14. 1 tbspvanilla

Cooking Instructions

    Preheat oven to 350°.

    Lightly grease 8x8-inch pan.

    In large mixing bowl, stir together eggs, sugar, butter, half & half, vanilla, 1 cup pecans, 1 cup cranberries, and cubed bread.

    Spoon into prepared pan. Bake for 25 minutes.

    For Lemon-Vanilla Hard Sauce:

    Cream butter, zest and juice on medium speed with electric mixer.

  7. 7

    Gradually add powdered sugar and vanilla, beating until light and fluffy.

    When done baking... Immediately top with Lemon-Vanilla Hard Sauce and allow to melt.

    Sprinkle with reserved cranberries and pecans. Serve.

    Cooks Tip: Try Lemon-Vanilla Hard Sauce over other warm baked goods such as scones or muffins.
