Awesome comfort cake when you have nothing much in the kitchen or abadunce in carrots.
Cooking Instructions

Whisk the eggs in a large bowl till foamy

Get all the dry ingredients together in another bowl IE flour, baking etc

Add the carrots,oil,and eggs together.

Then little by little start incorporating the flour into the wet mixture until it's done

Bake In a convictional oven at 180 degrees for 60 mins.

For the carrots. Use coloured marzipan and a lemon icing glaze for covering the cake add crushed ginger nuts or cornflakes and wow your guests

Carrot cake was my mother’s favorite cake. I can remember being four years old and peeling carrots and licking the batter off of the spoon. I've been making this cake for over 20 years.The amount of the grated carrots does not have to be exact. You will not notice it. I actually made this cake for Valentine's day. I mean Valentine's day is too overfilled with chocolate and heart shapes. Sometimes we just need a simple cake like this.
