Ingredients

  1. Batter
  2. 3 cupsgrated carrots
  3. 2 cupssugar
  4. 1 1/2 cupsMazola oil
  5. 4eggs (unbeaten)
  6. 3 tspcinnamon
  7. 3 cupssifted flour
  8. 3 tspbaking powder
  9. 2 tspbaking soda
  10. 1/4 tspsalt
  11. 1 cupwalnuts chopped
  12. Frosting
  13. 1 Tbsbutter
  14. 1large package Philadelphia cream cheese
  15. 1 cuppowdered sugar
  16. 1 cupchopped walnuts for garnish
  17. 1 tspvanilla

Cooking Instructions

    Preheat oven to 350. Grate carrots. Squeeze out all liquid using a cheesecloth or clean dish towel.

    In a large mixing bowl, mix carrots, sugar, and oil. Next, beat in eggs. Lastly, mix in dry ingredients.

    Bake for 50 minutes - 1 hour at 350 degrees.

    Frosting: Mix softened butter, vanilla, and cream cheese. Gradually add powdered sugar. Frost cake. Add nuts on top.
