Cooking Instructions

Combine the flour with enough water and knead into a semi-stiff dough. Cover and keep aside for 15 to 20 minutes. Divide into 6 equal portions.
- 2
Filling
1. Pressure cook the chana dal on low heat till 5 to 6 whistles.
2. When the pressure settles down open the cooker and drain off the water completely.
3. Then mash the dal properly. Add sugar and cook stirring continuously till the mixture thickens and starts to separate the pan.
4. Remove from heat and add nutmeg powder or cardamom powder.
5. Mix well. The Puran (stuffing) is ready to make paratha. - 3
Roll 1 portion of the dough in to a small circle. Put a portion of the above stuffing in the middle, and close it by bringing all the edges in the middle and roll it again to make it a paratha (poli)

Repeat with the remaining dough and stuffing to make 5 more parathas.

Mishti Singara: Sweet Samosas Stuffed with Kheer and Khoya Mishti Singara: Sweet Samosas Stuffed with Kheer and Khoya
While traditional samosa or singara (that's what we Bengalis call it) are filled with a spicy potato filling, this one comes with a sweet filling made of reduced milk, milk solids and semolina, laced in sticky sugar syrup. The filling can also be made of chhana or cottage cheese, but I like the kheer version more. The given proportion yields around 40 small samosas or 30 large ones.See more on my blog post here: http://www.allthatsdelicious.com/mishti-singara-recipe Lets Talk Food -

Mishti Chire Bhaja (Sweet Fried Beaten Rice) Mishti Chire Bhaja (Sweet Fried Beaten Rice)
#5ing - Chire Bhaja (Fried Beaten Rice / Poha) in general is a very popular Bengali snack. They can either be savoury or sweet. This is the latter version. I have very fond memories regarding this particular recipe. As a child this snack was a regular feature in my house. My late mom would dish out this in a ziffy, especially as an evening snack whenever I used to have hunger pangs. So preparing this after ages.It is very simple and a yummy snack. Just mix the fried beaten rice with some fresh grated coconut, mixed chopped nuts and some sugar. You are done and ready to savour it. For a healthier version, you can skip the sugar and add some raisins or chopped dates. So do give it a try and I'm sure you'll love it. Bethica Das
