My mother-in-law got a bag full of sweet potatoes during this visit. The recipe is an attempt to satiate my daughter's sweet tooth with nutrition of sweet potatoes. Paratha is an Indian flatbread with filling and needs a little practise for rolling.

My mother-in-law got a bag full of sweet potatoes during this visit. The recipe is an attempt to satiate my daughter's sweet tooth with nutrition of sweet potatoes. Paratha is an Indian flatbread with filling and needs a little practise for rolling.
Cooking Instructions

Steam the sweet potato for 5 mins in microwave and peel off the skin.

Prepare a soft dough using flour and water.
- 3
While dough is resting, mash the steamed potato and add jaggery.
- 4
Take a small ball of dough- roll it flat roughly. Grease a little ghee and spread the filling in middle and close the ends.

Lightly press the ball in dry flour and roll it thin.
- 6
Put it on a preheated girdle and cook it one side till light brown, then turn and apply ghee . similarly smear ghee on other side and keep on flipping every 5 sec till both the sides are cooked.

Cut the paratha in 8 pcs and serve with date syrup.
