Been trying to achieve fluffy pancakes n m happy that I finally did. This was made for two bt I ended up eating only one. Proof that it was sweet.
Cooking Instructions

In a bowl, mix together sugar and eggs and whisk thoroughly. Add salt and combine.

To the mixture, add flour and milk interchangingly as u whisk till u get a thick consistency.

Add the tablespoonful of vanilla essence and whisk. If the mixture becomes too runny, add a little flour since the aim is to achieve a slightly thick paste.

Once done, preheat ur pan. Add a little oil to heat then pour one serving spoonful of batter on the oil. Using a spoon, spread the butter in one circular motion and let cool till brown. Turn the other side and let cook.once done, remove and let cool.

I prefer having it cold with hot tea.Point to note, ensure that the heat is not too high for a perfect outcome. I used a jiko n heat was high bt still, it was very sweet and well cooked inside.
