Soft Fluffy Whey Pancakes

I drained 500 g of plain yogurt overnight and ended up with 200 g of whey, so I tried making this.

I made these soft and fluffy pancakes without using eggs or pancake mix. While cooking the butter will ooze out (occasionally it doesn't), giving you delicious pancakes that have a beautiful buttery smell. These are only slightly sweet, so adjust the amount of sugar to your liking. Recipe by Chi-haru

Ingredients

  1. 200 grams★Cake flour
  2. 20 grams★Sugar
  3. 15 gramsUnsalted butter (melted)
  4. 200 gramsWhey
  5. 1 1/2 tsp★Baking powder
  6. 1/2 tsp★Baking soda
  7. 1few drops, (to taste) Vanilla oil

Cooking Instructions

    Combine and sift the ★ dry ingredients.

    Add the whey and mix. Mix in the melted butter. Add vanilla oil if you like.

    Heat the frying pan, then place on a damp cloth once to cool. Heat on low and pour in the mixture.

    Once the top has become bubbly turn it over, cover with a lid and cook through. Takes about a minute and a half to two minutes, depending on how thick you make them. Check carefully to make sure they are cooked all the way through.

    And it's complete. Serve with honey or maple syrup.

    Version with raisins: I reduced the sugar by 10 g and added raisins.

    This one is with raisins.
