Presenting Cauliflower Risotto with Avadhi twist. This incredible satisfying dish is definitely in hot list of weight watchers. The Italian risotto with Cauli rice and Awadhi sides is a perfect low carb dish. The risotto is made creamy with cashew paste, milk and lots of love as per Chef Siddharth. Awadhi gobi kebabs, masala tuile and sauce makes it perfect heavenly brunch.
Cooking Instructions

Wash, clean Cauli florets. Add all spices mentioned in kebab and marinate for an hour. Soak wooden skewer in water. Add florets to skewer and roast in oven for 25-30 minutes.

For risotto, take florets in mixie jar and grind to coarse rice. Add 3 tbsp milk to cashew and make it's paste.

Add 1 tbsp butter to a pan. Add bay leaf, cloves. Add chopped onion. Add salt, turmeric and chilli powder. Once cooked cool it and churn it into mixie. Add chilli sauce and tomato ketchup. Mix it well.

Dry roast clove, cinnamon, cardamom. Add Cauli rice and roast it for 3-4 minutes on low flame. Add milk and cook on slow flame.

Add cashew paste, salt and cook until creamy texture.

Cut thick onion slices. Sprinkle spices and oil on onion slices. Roast until cooked.

For tuile add flour to water. Add sauce and seive it. Heat pan add oil. Once hot pour mixture. Let it bubble.

Once water is reduced sprinkle chilli powder. Take off carefully once cooked. Dry it on kitchen towel paper.

Arrange cucumber in round. Take a bowl add risotto and plate it in middle. Line it with sauce. Top with roasted onion. Crown with tuile. Arrange kebabs on sides. Enjoy this royal and heavenly risotto with kebab and sauce.
