Shukto
Cooking Instructions
- 1
At first cut all vegetables in rectangular strips or 2-3 inches length. Like these pictures. All the vegetables need to wash well and keep it aside.
- 2
Take a bowl, add maida into the milk and mixed it well.
- 3
1st boil potato, sweet potato, drumsticks and raw papaya into boiling water. Boil it for 4-5 mins. Take out all vegetables from boiling water and keep the water for later use.
- 4
Heat oil in a kadai. Fry vadi 1st, then fry long beans and raw banana together. Then fry bitter gourd separately.
- 5
In the same oil, add bay leaf and radhuni. Wait for few seconds. Now add ginger paste, stir it for 1 min, then add poppy seed paste. Cook it till raw smell is gone. Add boiled vegetables.
- 6
After adding boiled vegetables, add salt and sugar. Mixed it well. Pour the vegetable stalk. Cover the lid and cook it for 5 mins. As it’s already boiled, it will not take longer time to cook. After 5 mins, open the lid and add fried vadi, long beans, raw banana, bitter gourd. Again mixed it thoroughly. Cook it until all veggies are completely boiled.
- 7
Now add milk and ghee. Give it a quick mix. Cover the lid and again cook it for 3-4 mins. Switch off the flame. Serve it with steam rice.

Shukto Mishmash of vegetables Shukto Mishmash of vegetables
Shukto is a mishmash of different vegetables often cooked in Bengali household. Bori or dried lentil dumplings are added to this dish. You can prepare them at home or buy them from the stores. The star of the dish is bitter gourd. Other vegetables like drumstick, eggplant, plantain or raw banana, raw papaya preferably cut to the same size are added to the shukto. The golden rule that I have learnt from my mother is, you do not add turmeric and pepper to the shukto. Basically, it is a perfect dish for Indian summers. The spice that is used to prepare shukto is radhuni or wild celery. This is a unique spice used mostly in Bengali cuisine. As you smell radhuni you know that shukto is being cooked in the kitchen. However, if radhuni is not available methi/fenugreek seeds can be used instead.#nogarliconion #everydayveg The Epicurean Feast -

Pepes Ayam Kemangi (Indonesian Chicken Dish with Sweet Basil) Pepes Ayam Kemangi (Indonesian Chicken Dish with Sweet Basil)
Pepes is the way of cooking using banana leaves. The dish is coated with spices and wrapped in banana leaf. Great ingredients for pepes are chicken, fish, and tofu. The dish can be steamed, grilled, or cooked in an oven. The aroma of cooked banana leaves will linger on the dish as an exotic accent.I am using chicken and sweet basil in this dish. The aromatic banana leaves and the rather sharp tasted sweet basil leaves allow you to devour the dish using not only your sense of taste, but also your sense of smell. Berlian Utami -

Homemade Curry in a Pressure Cooker Homemade Curry in a Pressure Cooker
My daughter badgered me to make curry with a pressure cooker. She says the vegetables cooked in a pressure cooker taste a lot sweeter. The vegetables releases enough water for the pressure cooker. That's why you should only add a modest amount of water. Otherwise it will turn out runny and thin. For 12 servings. Recipe by Fuwarin cookpad.japan
