Kheer is a very easy but super delicious dessert of the Indian subcontinent. We love to have kheer on any occasion at any time. There are innumerable versions of kheer or rather it is so versatile that you can make them differently according to your taste and availabilities. Today I am sharing a very easy and delicious date kheer. I soaked dates in milk overnight to enhance the flavour and it was awesome.

6 servings
  1. 1 cupleftover cooked rice
  2. 750 mlMilk
  3. 10Dates
  4. 2 tablespoonsSugar
  5. 2 tablespoonsfresh Cream
  6. 1 teaspoonGhee
  7. FewCashews to garnish

Cooking Instructions

40 min
  1. 1

Take some good quality dates to a pan.

  2. 2

Add in 1 cup of milk and bring to boil.Cook in low heat until dates become soft.

  3. 3

Remove from heat and keep aside for about 4 hours or keep in the refrigerator overnight so that the flavour of dates incorporate well on the milk.

  4. 4

Next day or after 4 hours, remove the seeds of the dates and grind the mixture to make a smooth paste.

  5. 5

Take 1 cup of cooked rice to a heavy-bottomed saucepan.

  6. 6

Add in rest of the milk to the pan and place the pan in the stovetop. With an electric hand blender blend them well to make a homogenous mixture. You can do this step in a regular blender also.

  7. 7

Continue to cook in medium-low heat. Add in the date mixture and mix well. Add sugar according to your taste.

  8. 8

Also, add in 2 tablespoons of fresh cream for richness. When the kheer comes to a thick consistency remove from heat.

  9. 9

Heat 1 teaspoon of ghee in a pan and fry some cashews.

  10. 10

Transfer the kheer to a serving bowl, garnish with fried cashews and date pieces and serve warm or at room temperature.
