Brad's beef braised in stout with sweet potato and parsnip medly

One of the worst storms in recent history is hitting the Pacific Northwest right now. This was my comfort food to ride it out.
Cooking Instructions

Liberally rub McCormick's all over beef roast. Sear in a frying pan on med high heat

Mix the soups and beer in a 10 X 14 baking dish

Place seared roast in dish. Cover with foil and bake at 325 if you have a lot of time bake at a lower temp. Flip roast every half hour. At 325 mine took about 2 1/2 hrs.

Mix all the ingredients for the medly in a 9x13 baking pan. Cover with foil. Poke 2 holes for steam to escape

When beef starts getting tender, place in oven with it. Stir every 10 minutes. Should be done in about 30 minutes

Remove from oven and serve. I poured the au jus from the roast over top, but can be served in a ramekin on the side. Serve with stone ground mustard or horseradish

I think every household has their own way to make 'Stir Fried and Simmered Beef and Burdock Root', but this is my method.If you stir fry the burdock root in the same frying pan you stir fried the beef in, the burdock root will not be properly coated by oil. Even if it's a bother, stir fry it in a separate pan for better, richer flavor. If you do stir fry the beef and burdock root together the flavor will be lighter. This is an adaptation of a recipe from The Explorers Journal, which is a hiker/explorer quarterly I picked up at a Fjallraven store, where my husband bought a raincoat. The original recipe called for "rock tripe" as the protein, which is a mushroom that can be gathered while hiking, as a survival soup. I had an excess stock of burdock root and sweet potatoes.Precooking in the microwave makes this a quick-prep dish. (But be careful not to over cook, or the sweet potatoes will break apart!)Potato starch is used to thicken the sauce, so it coats the veggies nicely!For those who can take spicy, try cooking the red chili pepper with half of the seeds!
