Winter time is the best time to enjoy vegetable whether leafy or otherwise. Broccoli is one of my favourite vegetable and I love to have it in any form. Soup being my favourite food I mostly enjoy winter vegetables as Soup. Broccoli Soup is thick, sweet as the Broccoli was sweet in taste, topped with cooker chicken to give the extra texture to the Soup

Soup being my favourite food I mostly enjoy winter vegetables as Soup. Broccoli Soup is thick, sweet as the Broccoli was sweet in taste, topped with cooker chicken to give the extra texture to the Soup
Cooking Instructions

For Purée - Cut broccoli florets in small pieces. In a wok heat butter, add shallots and garlic, cook until shallots softened a little. Add vegetable stock and cover for 8 mins

Cool to put in a blender to blend smooth

In a wok heat butter, add All-purpose Flour and stir so that there are no lumps. Add milk and stir to thicken a little. Add the broccoli blended soup. Mix well.

Add salt and black pepper powder. Stir and set aside.

Plate, add fresh cream, red chilli powder, cooked chicken shreds and enjoy a thick soup

A mention about the lemon grass, remove the outer layers, finely chop a length about 4-5 inches long, then chop it again! I'm a great fan of chicken soup as a natural cure for all ills, and I liked the idea of giving it an Italian twist. The original recipe uses cooked shredded chicken, but I didn't have any so I decided to buy a whole chicken, use some meat from that, use the carcass to make my own stock, and freeze whatever I didn't use for the soup. I asked the butcher to debone the chicken for me. Also, I used the last bit of my garden basil but you can use dried (as the original recipe does). Becky
