Rajma chawal is one of the most popular foods in North India specially among Punjabis.
Rajma is cooked in rich gravy of onion and tomato with buttery flavour and is served with rice.
I tried this punjabi recipe and turned out awesome. Anyone can try with easily available ingredients. No one can say no to this amazing food.

Ingredients

  1. To make rajma we need:
  2. 3/4 cuprajma
  3. 2-3Small pieces of bay leaf
  4. 2-3small pieces of cinnamon
  5. 1cardamom
  6. 2cloves
  7. 2.5 cupswater
  8. 1/2 tspturmeric powder
  9. to tasteSalt
  10. To make gravy for rajma we need:
  11. 3tomatoes roughly chopped
  12. 1onion large finely chopped
  13. 1 inchginger
  14. 4-5 clovesgarlic
  15. 2green chillies
  16. 1 tbspbutter
  17. 1/2 tspcumin seeds
  18. 1/2 tspturmeric powder
  19. 1/2 tsproasted cumin powder
  20. 1 tspcoriander powder
  21. 1/2 tspgaram masala
  22. 1 tspoil
  23. to tasteSalt
  24. as required Finely chopped coriander leaves
  25. To make rice:
  26. 1 cuprice
  27. 1.5 cupwater
  28. 1 tspghee
  29. as per tasteSalt

Cooking Instructions

    Firstly, soak rajma in excess water for 6-8 hours.

    Wash soaked rajma properly and put it in a pressure cooker.

    Then add 2.5 cups water, salt, turmeric powder, bay leaves, cardamom, cloves and cinnamon pieces and close the pressure cooker and cook 1st on high flame till first whistle then reduce the flame to low to medium and cook for another two whistles. Then switch off the flame and wait till pressure is released from cooker.

    After that, remove the pieces of spices we had added in it.

    In the meantime, we will prepare gravy for rajma. Fir this grind chopped tomatoes, ginger, garlic and green chilli to make a smooth paste.

    Now, heat oil and butter in a pan. Sprinkle cumin seeds and let it crackle, then add chopped onions and saute until it becomes soft. Then add the tomato paste and cook for 6-8 minutes until you see oil coming out from the gravy. Then add, cumin powder, coriander powder, garam masala, chopped coriander leaves and mix well.

    Now add this gravy in the pressure cooker and mix with cooked rajma. And close the lid and pressure cook on medium flame for one whistle.

    When pressure is released, take out rajma im a serving bowl and serve with rice.

    To make rice: wash rice properly.

    Take rice and water along with ghee and salt. Then pressure cook for 1 whistle on medium flame.

    Wait until pressure is released itself. Then serve hot rice with rajma along with lachha onion and curd water.
