Instant Kalakand with Condensed Milk

Kalakand is an Indian traditional sweet which is prepared using fresh cottage cheese, milk and sugar. To make it quicker, I have used condensed milk and it really tasted delicious. When you are in a hurry it really becomes easier to prepare this traditional sweet using condensed milk. Homemade cottage cheese is the best for this sweet but you can still use store bought fresh paneer or cottage cheese to prepare this sweet. Make sure that the cottage cheese you buy is super soft and fresh as it makes a lot of difference in the texture and the taste.

Ingredients

  1. 300 gramfresh cottage cheese /paneer
  2. 400 gramcondensed milk
  3. 1/2 tspcardamom powder
  4. 1 tbspalmond slivers
  5. 1 tbspcashew nut slivers
  6. 1 tbsppistachio slivers

Cooking Instructions

    First of all grate or crumble paneer/ cottage cheese. If you are making home made cottage cheese then you just have to crumble it. If you are buying it then you can crumble it or grate it. Make sure that you get very fresh paneer if you are buying it as it makes a lot of difference in the the texture and the taste.

    Add condensed milk to a pan and start heating it on medium heat. Now add crumbled cottage cheese to it and mix it well.

    Now cook it on low to medium heat stirring occasionally until the mixture becomes thick and everything comes together in the centre of the pan. This will take around 20 - 25 minutes depending upon the the thickness of the pan you are using and the the amount of heat it is cooked on.

    Add the mixture in a greased tin or a plate /thali. Level it and sprinkle dry fruits on top and press it lightly. Let it cool down completely at room temperature for couple of hours. Now cut it into desired shape. If it is too soft and you can not cut it then just serve it in a bowl and it still tastes equally delicious.

    Kalakand can be stored in the refrigerator for a week. It tastes great served fresh at room temperature.
