Jada Mathiya / Thapda

Jada mathiya or thapada is a Gujarati snack which is prepared during Diwali. It is a lightly sweet and spicy fried snack which goes really well with a hot cup of tea or coffee. It is prepared using moth flour that is why it is called mathiya.

Cooking Instructions

Mix both flours and all the spices in a bowl. Boil water and add sugar to it and turn off the heat. Let the sugar dissolve completely.

Make a dough using sugar water. now add 1 tsp oil on the dough and knead it until nice and smooth. Cover and keep the dough to rest for 15 to 20 minutes.

Divide the dough into four equal portions and make long thin logs out of it. Cut it into smaller portions and roll it in your hands and press it a little. Now on a greased surface, roll little thick medium size circles out of the dough.

Heat oil in a pan on medium heat. Add a few thapda at a time and fry it on medium heat until golden brown in colour. It should puff up in the hot oil. Some might not puff up but do not worry, it still tastes equally delicious. It becomes crispy once cold.

Fry all the thapda in the same way. Let it cool down completely and store it in an airtight container upto 2 weeks..

Serve thapda with a cup of tea or coffee.
