We know that Upma is consumed as a common breakfast & Murukku being a Savoury snack is munched with a hot cup of tea/coffee in South India.
At times, kids resist in consuming the regular upma. To avoid the wastage of food , you can convert the left over food smartly into a delicious recipe.
So it struck my mind to give a unique & tasty twist to the regular upma.
It turned out into a wonderful recipe. Hope you too try it 🙂 .

Ingredients

4 servings
  1. 1 cupUpma (Tomato / any flavour)
  2. 3 cupsRice Flour
  3. 1/2 cupBesan
  4. 2-3 teaspoon Red chilli powder
  5. 2 teaspoon Carom seeds / Ajwain / Vamu (crushed/ powder)
  6. 2 tablespoon Hot oil
  7. 1 teaspoon or as per tasteSalt
  8. as neededOil to deep fry

    In a dry mixie jar, make a smooth paste of the already prepared upma. Do not add water while preparing the paste. Also ensure that the tempering used in upma preparation is also turned into a fine paste.

    Transfer the paste to a bowl. Add the rice flour, besan, red chilli powder, hot oil, salt and crushed carom seeds to it. Mix well to form a smooth dough similar to the usual murukku dough.

    Heat oil in a kadai over a low flame. In the meanwhile, grease the murukku mould with oil & fill the mould with the dough.I used the 3 hole disc to make this murukku. Press it in a circular motion to make murukku. You can squeeze the murukku into the hot oil directly.

    Fry the murukku until golden brown. With the help of a slotted ladle, turn & fry the other side carefully. Once it is cooked the sizzling sound stops. You can now transfer the upma murukku into a serving plate.

    Repeat the same process for the rest of the dough.

    Upma murukku can be stored in an airtight container for a week. It stays fresh and crispy when stored at room temperature. Tastes good when served at 5pm with tea/coffee.
