Rabdi is a traditional Indian sweet. It is basically sweetened reduced milk. Rabdi can be served as it is or it can be served along with malpua or jalebi. It is a really delicious dessert which requires very few ingredients. It takes some time to reduce milk but the results are worth the wait!

Ingredients

3 - 4 servings
  1. 1lt full fat milk
  2. 3-4 tbspsugar
  3. 1 pinchsaffron
  4. 1/4 tspcardamom powder
  5. 1 tbspalmond slivers
  6. 1 tbsppistachio slivers
  7. A fewdry rose petals

Cooking Instructions

    Add milk to a heavy bottom pan. When it starts to boil, add sugar to it.

    Continue cooking milk until it reduces to half. Keep on scraping and collecting dry milk from the sides and again add it to the milk. Keep on stirring frequently so that it does not stick to the bottom. Now add saffron to it and reduce it a little more. You can keep the consistency of the rabdi according to your liking. If you do not like it very thick then turn off the heat when it reduces to half. Turn off the heat and add cardamom powder.

    Let it come down to room temperature then store it in the refrigerator.

    Garnish it with almond slivers, pistachio slivers and dry rose petals. Serve chilled. It tastes really delicious served with warm malpua or jalebi. It can be a part of your meal or it can be served as a dessert.
