Potato subji is one of them, today I made potato subji in dry form with no masala..
Cooking Instructions

Boil,peel and cut the Potatoes in a diced..
Cut the chillies and ginger. - 2
In a nonstick pan add ghee, Cumin seeds,let it splutter,then add cut chillies, crushed ginger and curry leaves, mix it..
Now add diced potatoes.
Mix with tadka.. - 3
Add red chilli powder,sugar, lemon juice,fresh coriander and mix thoroughly so all spices can cover well on Potatoes.
Leave for 2 minutes on the gas then switch off the flame. - 4
Potato dry subji is ready..
Transfer into a serving bowl,
Sprinkle more coriander and Serve..
This subji can be eaten with plain curd..
