Soba is a thin Japanese noodle made from Buckwheat flour. These are served either cold or hot. Both the ways they are just amazing. These noodles have many health benefits due to Buckwheat. It keeps a check on blood sugar levels, improves Heart health and fights inflammations in the body. In this particular version, I have kept it simple. Yet it's absolutely flavourful and delicious. Plus healthy too.
These can be enjoyed for a Breakfast on a weekend or a holiday. Brunch on any given day and Dinner on special days. It's a simple one and doesn't require any fancy ingredients or a long list of them. Sesame Seeds, Oil and paste all go into making this one a super delicious bowl of scrumptious goodness.

Cooking Instructions

Boil noodles al dente in enough water on a high to medium high heat with a little of oil and salt. Do not over do it. Strain and set aside until use.

In the meantime, heat sesame oil in a deep pan. Add chopped garlic followed by the onion. Saute until translucent. Now add the soy sauce and the sesame paste. Also add the chilli flakes or the pepper. Mix and finally add in the boiled noodles.

Mix well and let it heat for about 2 minutes. That's it. Adjust salt and pepper. Garnish with both white and black sesame seeds. Enjoy! Yum!

There is one dish in a soba restaurant that I had always thought was Tororo Natto Soba (soba noodles with grated nagaimo yam and natto). But surprisingly, the staff explained to me that the white foamy part was actually egg white. The foam of the egg white is accentuated by mixing in natto. It was so delicious that I tried making it in my own way.Use a fresh egg. It's delicious if you chill it well. (The egg white and natto give a sticky texture.) The stickiness of natto will maintain the foam of the egg white.
