My husband asked me to make soba for lunch, so I added some leftover chicken and created the broth.
It's also an option not to include any chicken and top your noodles with a simple combination of green onions and tempura crumbs.
If you cook the chicken as-is in the mentsuyu, the oils from the chicken will render. So rinse in boiling water beforehand. Recipe by Snow*Love.

Soba mentsuyu
300 ml☆Water
1/2 tsp☆Dashi stock granules
2/3 tbsp☆Soy sauce
1 tbsp☆Mirin
1 pinch☆Sugar

Steps

Cut the chicken into bite sized pieces, rinse in boiling water, and drain in a strainer.

Add all of the ☆ ingredients to a pot and bring to a boil for the mentsuyu.

Add the chicken to the pot from Step 2 and bring to a boil. Remove any scum as soon as it forms.

Boil the soba to your desired firmness and drain in a strainer.

Transfer the noodles and the mentsuyu in a dish and it's complete. Top with minced green onions if you like.
