  1. For Rava Idly:
  2. 200 gms/1 bowl thick rava
  3. 1 bowlcurd
  4. 2 tbspoil
  5. 1 tsprai
  6. 1 tspchana dal
  7. 1 tspurad dal
  8. 10-12curry leaves chopped
  9. 1/2 tspchopped ginger
  10. 2-3green chillies chopped
  11. 2 tspchopped cashews
  12. 1/4 tsphing
  13. 20 halvesfried kaju
  14. 1 cupwater(approx.)
  15. 1 tspsalt
  16. 1 tspEno
  17. For Quick Sambhar:
  18. 3diced tomatoes
  19. 1 " piece tamarind
  20. 1onion diced
  21. 4-5garlic cloves
  22. 1/2 tsphaldi
  23. 1 tspdhanajira
  24. 1 tbspsambhar masala
  25. 1onion chopped
  26. 50 gmspumpkin
  27. 2 tspoil
  28. 1/2 tsprai
  29. 1/2 tspjira
  30. 1/2 tspmethi seeds
  31. 2dry red chillies
  32. 8-10curry leaves
  33. 1/4 tsphing
  34. 2 tsproasted besan
  35. 1 tspsalt
  36. 1/2 tspchilli powder
  37. 1/2 tspjaggery
  38. 2 tbspcoriander

Cooking Instructions

    For Rava Idly:
    In 1 tbsp oil, fry the cashew halves and keep aside. Ready all the tempering ingredients.

    In the oil add rai, chana dal, urad dal, chopped ginger, chopped green chillies, chopped curry leaves, chopped kaju and hing. Add in rava and mix well. Cook on slow gas for 3-4 minutes. Transfer to a container and cool completely.

    Add in 1 bowl curd and some water and prepare a batter. Cover and rest the batter for 15-20 minutes. The batter will thicken on resting. Meanwhile,prepare SI coconut chutney and ready all the Quick Sambhar ingredients.

    Crush diced vegetables, tamarind, garlic and masalas to a paste. Chop 1 onion and keep the sambhar tempering ingredients ready. In oil add rai. When it splitters add in jira, methi seeds.

    Add curry leaves and dry red chillies and hing. Add in 1 chopped onion and saute for 3 minutes. Now add in the vegetable-masala paste.

    Add in pumpkin pieces and salt and saute well for 3-4 minutes until the tomatoes are well cooked. Now add in 2 cups of water and mix. Bring to a boil

    Prepare a roasted besan slurry with 1/2 cup water. Add into the boiling sambhar. Stir to avoid lumps.

    Add in chilli powder and jaggery and boil for 5 more minutes. Lastly, add coriander and tasty Quick sambhar is ready.

    Steaming Rava Idlies:
    Add 1/2-3/4 cup water to the batter and adjust the consistency. Add Eno into the batter and mix. Grease idly stand with oil and place a fried kaju half in each cavity.

    Now pour batter into idly stand and place it in a readied idly cooker with water boiling inside. I also made a Tattai Idly.

    Steam idlies for 12-15 minutes until the inserted knife comes out clean.

    Take the idlies and serve hot with Quick Sambhar and SiI chutney
