  1. Pahadi Raita Or Cucumber Raita
  2. 1 cupthick yoghurt
  3. 1grated cucumber
  4. 1/2 tspsalt
  5. 1 tspmustard seeds crushed
  6. 1 tspmustard oil
  7. 1/2 tspturmeric powder
  8. 1/2green chilli chopped
  9. 1/2 tspblack pepper powder
  10. 1/2 tspred chilli powder
  11. 1/2 tspblack salt
  12. 1/2 tspchaat masala
  13. 1/2 tspamchur powder
  14. 1/2 tspdry roasted cumin powder
  15. Biryani Raita
  16. 1 cupthick yoghurt
  17. 2medium size boiled potatoes
  18. 1small onion diced
  19. 1green chilli finely chopped
  20. 1 tbspsugar
  21. 1 tspsalt
  22. 1/2 tspred chilli flakes
  23. 1/2 tspred chilli powder
  24. 1/2 tspchaat masala tsp
  25. 1/2 tspblack pepper powder
  26. Restaurant Style Green Raita
  27. 1 cupthick yoghurt
  28. Handfulcoriander leaves
  29. 1stem of spring onion green
  30. 3green chillies
  31. 1 tbspsugar
  32. 1 tspsalt
  33. 1 tspcumin seeds
  34. 1/4 inchginger
  35. 1big clove of garlic
  36. 1/2 tspblack salt

Cooking Instructions

    1.Pahadi Raita
    For thick raita in a big bowl add 1 cup thick yoghurt and whisk it to make smooth. Then add all the dry spices mentioned above in the ingredient section of pahadi raita and mix it well. Keep it aside and then grate a medium size cucumber in another bowl. If their is a lot of water in the cucumber then squeeze it and then add to the yoghurt mixture and if less water than add as it is. Mix it very well then add the crushed mustard seeds and mustard oil to it and mix it again.

    Add chopped green chilli and some chopped coriander leaves and mix well. Serve it as it is or keep it in the refrigerator then serve. The pahadi raita is ready to be served.
    2. Biryani Raita
    This is a very popular biryani raita served with any type of biryani either veg or non-veg or sea food biryani or even egg biryani. For this raita in a big bowl take 1 cup thick yoghurt and whisk it. Cut the boil potatoes in small bite size pieces or dice it. Then add to the yoghurt followed by diced onion.

    And the chopped green chilli and mix them well. Then add all the other ingredients mentioned above in the ingredient section of biryani raita and mix them all really well. Taste it and adjust the flavours. You can always add or less the spices as your preference and taste. Serve it as it as or keep it in the refrigerator then serve chilled choice is yours. By this the biryani raita is ready to be served.
    3. Restaurant Style Green Raita
    For this first we have to make a green chutney.

    Take a mixer grinder jar add chopped coriander leaves, spring onion greens, green chillies, cumin seeds, ginger, garlic and white salt to it. Add little water and grind it to a smooth paste. The chutney is ready take it out in a bowl. Now in a big bowl add the thick yoghurt whisk it then add 4-5 tbsp of prepared green chutney to it. Mix it well along with sugar and black salt. Taste it to balance the flavours and it's ready to be served. Serve it chilled or as it is as per your choice.
