This is the most delicious chocolate walnut cake - snack cake sized! It's covered in the dreamiest fudgy dark chocolate sour cream frosting and sprinkled with chopped walnuts. It only takes 30 minutes to prepare this cake, plus no mixer is required for the cake!

Ingredients

30 minutes
5 people
  1. 250 gflour
  2. 2 tspcoffee
  3. 2egg
  4. 2 cupwalnuts
  5. 1 tspbaking soda
  6. 1 cupsugar
  7. 2 tspcocoa powder
  8. Pinchsalt
  9. 1 tspbaking powder
  10. 1 1/2 cupbuttermilk
  11. 1 cupoil
  12. 1 tspvanilla extract
  13. Frosting Ingredients
  14. Pinchsalt
  15. 1 tspcocoa powder
  16. 1/2 cupsour cream
  17. 4/5 tspbutter
  18. 1/2 cupsugar
  19. 2 cupchocolate

Cooking Instructions

30 minutes
  1. 1

Whisk together your sugar and egg for 1 minute until you have a few bubbles.
Add the buttermilk, hot coffee, oil, vanilla extract and, salt and mix again.

  2. 2

Add your cocoa powder and whisk until smooth. Add your flour, baking powder, baking soda and fold until there are no pockets of flour.
    Stir in the chopped walnuts.

  3. 3

Pour into an 8x8 greased and parchment lined pan and bake for 35-45 minutes at 350 degrees Fahrenheit.

  4. 4

Let the cake cool in the pan for about 10 minutes, then remove and let cool completely on a wire cooling rack.

  5. 5

Melt the chocolate in a small microwave safe bowl. I recommend doing it in 15 second increments, making sure you stir after every increment so it doesn't burn.

  6. 6

Beat your butter and confectioners' sugar together on low speed in your stand mixer or with a hand mixer until well combined. Turn the speed to high and mix for 2-3 minutes until fluffy.

  7. 7

Add in your cocoa powder and mix on low until the cocoa powder is combined - this stops it from flying everywhere! Increase the speed to medium and mix for 1-2 minutes. Pour in your sour cream, melted chocolate and salt and mix once more.

  8. 8

Spread the chocolate frosting on top of your cooled cake and enjoy!
