Ingredients

  1. 500 gmchappan kaddu
  2. 1medium onion, chopped
  3. 1tomato, chopped
  4. 1 tspoil
  5. 1 tspcumin and mustard seeds
  6. 1 tspred chilli powder
  7. 1/4 tspturmeric powder
  8. 1/2 tspcoriander powder
  9. 1/2 tspgaram masala
  10. 1/2 tspkasuri methi
  11. 1 tablespooncrushed peanut powder
  12. 2 tbspwater

Cooking Instructions

    Wash, peel(optional) and cut the summer squash.

    Heat oil in a kadhai(wok). Add cumin and mustard seeds. Let them splutter. Add chopped onion and cook them till soft and light pink.

    Add tomatoes and spices, and cook for a while. Add water and cook till water dries and masalas are cooked properly.

  4. 4

    Once dry, add chopped kaddu and mix well. Cover and cook for 15-20mins or till kaddu is soft to eat.

    Add peanut powder and kasuri methi to it and turn off the flame.

  6. 6

    Enjoy this awesome subzi with hot parathas or phulkas.
