Hummus Crusted Chicken

As most of you now know, K and I have been on this healthy eating phase for the past three weeks. We have always usually eaten healthy during the week and have enjoyed some really calorie filled lunches and dinners over the weekend, so the last few weeks I cut that down too ... the result of course is visible and both K and I are liking the fact that our bodies are definitely a bit more toned, and certain clothes are no longer snug and tight! YAY! .... Just in case you are wondering, we don't consider ourselves fat and thus are dieting ... we just decided to cut down on the junk :)
In the last three weeks I have made a lot of hummus at home, and when I was menu planning for a sunday lunch, I suddenly remembered a recipe I had read somewhere (and I still don't remember where) but it involved hummus and chicken and it was cooked together ... so I jazzed it up a bit by getting some store bought flavored hummus
This is a quick and easy meal so this can definitely fit a busy working week schedule

Cooking Instructions

Place the well washed, skinless chicken breasts in the baking dish and season with salt and pepper

Final step: Cover each chicken breast with some hummus. I decided to go with a store bought one for a change as I always make it at home, SO I bought some sundried tomato hummus

Squeeze the juice of a lemon over the chicken breast and bake

You can also bake some veggies to go with this. I sauteed some broccoli, carrots and got some purple carrots in the farmers market so added that in and cooked it with some olive oil, garlic, cumin, salt and pepper

I had some whole wheat pita at home so warmed that a bit before serving

It was a very filling meal

I love lentils and I love Hummus, so why not put the two together! I had so much fun making this and my family ate all of it in one night. I was kind of envisioning an Indian vibe on the traditional Greek hummus. I didn't have tahini, so I substituted with a paste of cashews and sesame seed oil. The goat cheese really makes this creamy and nice on the pallet. I have decided to go on a hummus experience and I will be testing different nuts and flavors with legumes/beans.
