Cooking Instructions
- 1
Heat oven to fan 210C. Smear some butter all over a 23cm cake tin or ovenproof frying pan.
- 2
Melt the butter in a separate pan. Tip in the onion and cook over a gentle heat for 5 mins until softened.
- 3
Meanwhile tip all the dry ingredients into a large mixing bowl.
- 4
Beat together the buttermilk and eggs in a separate bowl, then stir in the buttery onions.
- 5
Pour over the dry ingredients and mix together until just combined and you have a batter.
- 6
Pour the batter into the cake tin or frying pan and smooth the top with a knife. Bake for 25 mins until golden and a skewer inserted in the centre comes out clean.
- 7
Cool in the pan for 10 mins, then turn out, cut into wedges and serve.

Cornbread Cornbread
This is a recipe from Alex Guarnaschelli that I amend slightly due to my liking. My family would be ashamed of me because this is not exactly southern cornbread, but I like it kind of smooth (less crumbly) and what they don’t know won’t hurt them. The other sinful thing I like, which I would strongly suggest, is putting an obscene amount of buttermilk into this cornbread (more than the recipe calls for) and pulling it out of the oven early so the middle is still raw. It sounds crazy, but try it. PlainAddieJane -
Cornbread Cornbread
My Mom Babe taught me how to make cornbread. We closely followed the Alber's Cornmeal cornbread recipe adding more sugar, melting Crisco shortening instead of using cooking oil, and adjusting the flour and cornmeal measurements. I use more flour and less cormeal instead of 50/50 so the cornbread does not crumble apart as bad. This is a sweeter cornbread with a cake like texture. So good! sandra53 -
