Ingredients

  1. 3 cupGrated zucchini (2 units)
  2. 3 cupAlmond flour
  3. 1/3 cupMelted butter or ghee
  4. 1/4 cupHoney
  5. 3Eggs beaten
  6. 2 tspCinnamon
  7. 1 tspBaking soda
  8. 1/2 tspSalt

Cooking Instructions

  1. 1

    Prepare grated zucchini and melted butter and set aside

  2. 2

    Mix almond flour, melted butter, honey and zucchini

  3. 3

    Add the beaten eggs, cinnamon, salt and soda and mix well

  4. 4

    Bake in silicone or paper-lined muffin tins at 180°C for about 20 minutes
