Cooking Instructions

Preheat oven to 350º.
- 2
Cook bacon until crisp in a large skillet over medium heat and drain on paper towels when done.

Remove all but 1 tbsp of bacon drippingsfrom the pan and reserve the remaining bacon drippings.

Add the potatoes and saute until slightly crisp, about 8 minutes. Transfer to a plate.

While cooking the potatoes,add 2 tsp of drippings to a separate skillet and saute pear slices until caramelized and softened, about 8 minutes. Transfer to a plate.

Cook the pear cubes in the second skillet until caramelized and soft about 8 minutes.

Whisk together eggs, milk, salt and pepper.

Add 1 tsp bacon drippings or butter to skillet. Heat over medium heat and add eggs, bacon, pear cubes, potatoes and 2/3 cup cheese.

Stir until eggs begin to set. Top with remaining cheese and pear slices. Garnish with crumbled bacon.

Bake in oven until eggs are fully set about 13 minutes. Serve warm and enjoy!

I wanted to serve something like this for brunch. I made mine easily with frozen puff pastry.It's easier if you bake the puff pastry on the day before making the quiche. I recommend using a chunk of cheese; preferably parmigiano reggiano or comte! It really makes it different from when you use store-bought grated cheese or easy melting cheese.
