Ingredients

6 servings
  1. 4 cupsvegetable broth
  2. 14 ozlite coconut milk
  3. 1/2 cupshredded carrot
  4. 1/2red onion, thinly sliced
  5. 1 tspgarlic paste
  6. 2 tspginger paste
  7. 1 tbspred chili pepper paste
  8. 1 1/2 tbsplemongrass paste
  9. 1 1/2 tbspgreen curry paste
  10. 1 1/2 tbsplime juice
  11. 1/4 tspsalt
  12. 1/2 tspblack pepper
  13. 2tomatoes, chopped
  14. 1/2 lbsfresh spinach

Cooking Instructions

  1. 1

    Add everything except spinach and tomatoes to stock pot. Bring to boil and simmer for 20 minutes.

    Add tomatoes and simmer 5 minutes.

  3. 3

    Serve over a small bunch of fresh spinach.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
