I made an easy extra side dish with the kabocha skin that was left over from when I made potage.Adjust the amount of salt and pepper according to the genovese sauce you use.The sauce I used was reduced salt, but if you are using store-bought which contains a lot of salt, you may not need to add any salt and pepper. I made these creamy juicy croquettes for my husband, who says it's hard to eat dense, floury croquettes.Adjust the cooking time of the kabocha squash depending on its size and variety.Remove the fat that comes out of the bacon as it cooks or it will be, too oily, and it will be hard to form the croquettes too. Kabocha Squash and Bacon Simmered In Soup Kabocha Squash and Bacon Simmered In Soup
I love sweet simmered squash myself... But my son doesn't like it.So I tried simmering it in soup, and it was a success. The cooking time varies depending on the variety of kabocha squash and how it's cut. It took me 7 to 8 minutes until it was tender this time, plus another 3 minutes to reduce the liquid in the pan. If you don't want to add oil, leave it out. Just cook the kabocha squash in the fat that comes out of the bacon! Recipe by Nanagukun cookpad.japan
