Leftovers…More of the yellow squash….this literally took minutes. We had it with rice, country style ribs and cabbage and sausage. Very more-ish.

Wasn't sure how to prepare butternut squash, so I tried this and it was amazing! Of course, everything is better with bacon!

The sweetness of the butternut squash with the saltiness of the bacon makes this a perfect side to a creamy pasta dish. Try it with my Bacon Chicken Bake!

I made an easy extra side dish with the kabocha skin that was left over from when I made potage.Adjust the amount of salt and pepper according to the genovese sauce you use.The sauce I used was reduced salt, but if you are using store-bought which contains a lot of salt, you may not need to add any salt and pepper.
